Can I setup product families that are different from PIDX families?

Yes. You can group products any way you want through the Product Groups page (Data Management > Product Groups) . Once you set up a product group, you can assign product to it through either the Product Groups page (Data Management > Product Groups) or the Products page (Data Management > Products ).
